Izakaya Sakamoto sashimi of ishidai and isaki. I remember my first time having soy sauce from Kyūshū. It is noticeably sweet. The first time I had it was when it was served with basashi, horse sashimi from Kumamoto. The sweet soy sauce is a perfect partner to the raw meat. Kyūshū is in the southern part of Japan and throughout the island the sweetness of the soy sauce changes.
Kyūshū is also famous for seafood and sashimi and the sweet soy sauce pairs well with the super-fresh sashimi, often caught the same day as when it is served. In Tokyo some of the seafood we eat is a day old as it is caught in ports away from the metropolis and takes time to get to our supermarkets and restaurants.
We prefer sweet soy sauce when having sashimi at home. Lately we have been using Sakura Kaneyo Koikuchi Kanro from Kagoshima. Made from soybeans and wheat. The soy sauce is aged for a year and has added sweeteners. The aging mellows and rounds out the flavor. It is rich in umami.
Tonight we were lucky to have two fish as sashimi. Ishidai 石鯛 (Oplegnathus fasciatus) striped beakfish had a rich texture. Isaki 伊佐木 (Parapristipoma trilineatum) three-line grunt is also a delicious fish. The Isaki came with a tag with information that it was harvested in the Goto Islands 五島列島 of Nagasaki. Both fish paired well with the Sakura Kaneyo Koikuchi Kanro サクラカネヨ濃口甘露 sweet soy sauce. The fish were purchased at Kakujō, a seafood specialty shop from Niigata.
The bones are cooked in water, kombu, and saké to make a soup. The fish look like they are in an onsen.
For the record the in-house fishmonger apologized for not adding colorful garnishes, something red, orange, or yellow, but we were too hungry to bother. 🤣
Kyūshū is also famous for mugi barley miso. Will try this miso later this week.
